Honey Lime Chicken Enchiladas

These are AMAZING!!! Not that great for you, but soooo delicious!

It's a bit of a twist on your typical enchiladas. We love these and make them all the time!

Honey Lime Chicken Enchiladas

Ingredients:
• 6 Tb. Honey
• 5 Tb. Lime Juice (1 large lime)
• 1 Tb. Chili Powder
• ½ tsp. Garlic Powder
• 1 Lb. Chicken, cooked and shredded
• Flour Tortillas
• 1 lb. Shredded Colby or Monterey Jack Cheese
• 16 oz. Green Enchilada Sauce
• 1 Cup Heavy Cream (optional but makes it really yummy)

Directions:
Mix the first four ingredients and toss with shredded chicken. Left-over rotisserie chicken works great. Let marinate at least 30 minutes or longer (I have put it together and let it marinate in the fridge all day). Pour about ½ cup enchilada sauce in the bottom of the pan. Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 for 30 minutes. Uncover for the last 5 minutes to brown the top.

Welcome Family!

Okay everyone. Here it is. The official Seibert Family Recipe Blog. I know, I know, it's taken me way way too long to get this up and going. But here it is. So, start posting!!

Here's what to do:

1. Either email me your recipe or log in to this blog and start a new post for each new recipe you add.

2. Type up the recipe (try to be as concise as possible for those recipes that are not quite written down anywhere but in your head).

3. Add a label or labels to it before posting it. The labels can be added by typing them into the box on the bottom right of where you are typing up your post (it says "Labels:") Please make sure each recipe is labeled either Breakfast, Lunch, Dinner, Appetizer, Treats. Then, you can add additional labels if you want. For example, if your recipe is chicken then add a "chicken" label. If it's pasta add a "pasta" label, and so on.

Pretty easy, right?? If you don't feel like posting things yourself, you can email me recipes and I can post them up for you. Then, whenever you are stumped for ideas of what to cook, you can come here and check out some good ones!

Oh and feel free to post pictures with your recipes, too!
